Hibachi Grilling an Easy Cookout

For a quick picnic there is nothing easier and faster than cooking on a hibachi grill. They are very portable and lightweight and easy to use. Simple delicious meals can be prepared in just a few minutes on a hibachi grill. From appetizers to desserts the hibachi grill is the perfect choice for a last minute quick picnic.
The following is a simple menu for an afternoon picnic all made on your hibachi grill.
Appetizer:
Frankfurter Canapes
20 cocktail frankfurters or Vienna sausages
20 cherry tomatoes
¼ cup oil
Thread frankfurters and cherry tomatoes alternately on soaked wooden skewers. Brush with oil. Broil over heat approximately 4 minutes.
Veggies
2 medium zucchini (sliced in 1 inch sections)
2 medium summer squash (sliced in 1 inch sections)
½ lb fresh mushrooms
1 green or yellow pepper (cut in 1 inch sections)
½ tsp oregano
½ cup melted butter
2 Tbsp. parmesan cheese
Salt and pepper to taste
Parboil squash for 4-5 minutes in water seasoned with the oregano. Thread all vegetables onto soaked skewers. Broil for 10 minutes, basting with butter and turning frequently.
Sprinkle with cheese and serve.
Main Course
Wine Glazed Shrimp
½ Cup sherry or saki
1 Cup Soy Sauce
1 Tbsp sugar
3 lbs shrimp peeled and deveined
Combine wine or saki, soy sauce and sugar in a saucepan
Bring to a boil
Thread shrimp on soaked skewers alternating heads and tails
Cook on hibachi, basting shrimp continuously with sauce. Cook until glazed.
Dessert
Broiled bananas
6 unpeeled bananas
6 Tbsp Honey
1 Tsp ginger
Make a 3 inch slit in each banana.
Dribble a tablespoon of honey into each slit
Sprinkle with ginger
Place on hibachi grill, slit side up and cook for 5 minutes.
